Don’t mind me, I’m just planning Christmas Dinner

I was at my sister’s and mine birthday dinner last weekend where she brought her goddaughters. Like any angsty teenager, they were complaining about the parents. One complaint was about how they can’t get to eat beef medium-rare because their dad loves it well-done.

So I volunteered to cook Christmas dinner for Mom, Sis and the kids. I wanted to do a Beef Rib Roast, but the kids have requested for Beef Wellington.

I will attempt the Beef Wellington for the very first time but only if they eat the veggies. My sis makes a good Godmother because she’s indulgent but as for me, I don’t do justice as a Godfather.

Starter

Pan-fried Duck Breast with Balsamic Vinegar Reduction

Served with lettuce leaf wraps

Main

Beef Wellington

Served with Roast Potatoes, Petit Pois Ricotta Salad and chilled Momotaro Tomatoes

Desserts

Baked Apple with vanilla butter sauce &

Possibly Christmas Fruit Cake
